- Use the sharp knife and cutting board to peel and seed the white part of the watermelon rind, then chop into small cubes for easier blending.
- Place the chopped rind into the blender jar, add water (or coconut water), honey, and jasmine extract.
- Secure the lid of the blender and blend on high speed for 30-60 seconds until the mixture is smooth and the rind is finely puréed, with a slightly fibrous texture.
- Check the consistency; if too thick, add a splash more water and blend briefly to incorporate. Taste and adjust sweetness if needed.
- Pour the smoothie into chilled glasses, optionally garnish with a small sprig of mint or a slice of watermelon, then serve immediately.
Notes
For extra flavor, add a dash of lime juice or a few basil leaves during blending.
