  • 4 cups cubed watermelon seedless and ripe
  • 0.5 cup granulated sugar adjust to sweetness
  • 1 tbsp lemon juice optional, enhances flavor

Method
 

  1. Place the cubed watermelon, sugar, and lemon juice into a blender. Blend on high until the mixture is completely smooth and no large chunks remain, about 30 seconds. The mixture should be bright red, slightly viscous, and well combined.

  2. Pour the blended watermelon mixture into a shallow dish or baking pan. Spread it evenly with a spatula to promote even freezing. Place the dish in the freezer.

  3. Every 30 minutes, remove the dish from the freezer and use a fork to scrape and stir the mixture. Continue this process for about 2 to 3 hours, until the mixture has transformed into flaky, ice-crystal structures similar to shaved ice.
  4. Once the granita reaches the desired flaky, snow-like texture, scoop it into glasses or bowls. The crystals should be light, airy, and easily shavable with a spoon.
  5. Serve immediately for maximum freshness and icy texture. Optionally, garnish with fresh mint leaves or a wedge of lime for added flavor.
