Ingredients
  

  • 4 cups watermelon cubes seedless, ripe watermelon
  • 1 tablespoon fresh lime juice preferably freshly squeezed
  • 10 fresh mint leaves mint plus extra for garnish (optional)
  • 1 teaspoon honey or simple syrup adjust to taste
  • 1 cup water

  • Juice Sieve or Fine Mesh Strainer

Method
 

  1. Place the watermelon cubes and mint leaves into the blender.

  2. Add the lime juice, honey, and water to the blender.

  3. Blend on high speed until the mixture is smooth and slightly frothy, about 30 seconds.
  4. Pour the blended mixture through a fine mesh strainer into a pitcher to remove pulp and mint bits, pressing gently with a spoon.
  5. Chill the strained juice in the refrigerator for at least 30 minutes, then serve over ice, garnished with additional mint leaves if desired.

Notes

Adjust sweetness with more honey if needed. For a sparkling version, top with club soda before serving.
