Ingredients
  

  • 1 lb ground beef or preferred ground meat
  • 1 cup salsa zesty or mild according to preference
  • 9 uncooked lasagna noodles regular or no-boil style
  • 2 cups shredded cheese cheddar, Monterey Jack, or Mexican blend
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • to taste salt and pepper

Method
 

  1. Heat a skillet over medium heat. Add ground beef and chopped onion; cook until the beef is browned and onion is translucent, about 8 minutes. Stir in minced garlic and cumin, cooking for an additional 30 seconds. Drain excess fat if necessary.

  2. Add salsa to the cooked meat mixture and stir to combine. Simmer for 5 minutes until the sauce thickens slightly and flavors meld.

  3. Bring a large pot of water to a boil. Cook lasagna noodles until al dente, following package instructions. Drain and set aside.

  4. Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish. Spread a thin layer of meat sauce on the bottom.
  5. Layer three lasagna noodles over the sauce, then spread half of the remaining meat sauce over the noodles. Sprinkle with one cup of shredded cheese. Repeat layering: noodles, remaining meat sauce, and another cup of cheese. Finish with a final layer of noodles topped with the remaining cheese.

  6. Cover the baking dish with foil and bake in the preheated oven for 25 minutes. Remove foil and bake for an additional 5 minutes, or until the cheese is melted and bubbly. Let rest for 10 minutes before slicing and serving.

Notes

For extra flavor, top with chopped cilantro or a dollop of sour cream before serving.
