Ingredients

  • 4 cups ripe apples (peeled, cored, and chopped) preferably sweet varieties like Fuji or Honeycrisp
  • 1 tablespoon cinnamon ground
  • 1 teaspoon chili powder
  • 1 large onion diced
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • to taste salt and pepper

Equipment

  • Large saucepot
  • Blender or immersion blender

Method

  1. Heat the large saucepot over medium heat and add the olive oil, letting it shimmer.
  2. Sauté the diced onion until it becomes translucent and fragrant, about 5 minutes, with a slight sizzle and sweet aroma filling the kitchen.
  3. Add the chopped apples to the pot and stir to coat them in the onion and oil mixture; cook for another 5 minutes until the apples begin to soften and smell fruity.
  4. Sprinkle the cinnamon and chili powder over the apples and onions, stirring well until fragrant, with the spices creating a warm, spicy aroma.
  5. Pour in the vegetable broth, bringing the mixture to a gentle boil, then reduce the heat to low and let it simmer uncovered for about 20 minutes, until the apples are very tender and the flavors meld together.
  6. Use an immersion blender or transfer the mixture carefully to a blender, blending until smooth and velvety, then return to the pot if needed.
  7. Taste and season the soup with salt and pepper as needed, adjusting the balance of sweetness and heat to your preference.
  8. Finish by ladling the vibrant orange soup into bowls and serve hot, garnished with a pinch of extra cinnamon or chili if desired.

Notes

For a creamier texture, swirl in a spoonful of coconut cream before serving. Adjust spice levels by adding more chili powder if you like heat, or more cinnamon for sweetness. This soup pairs beautifully with crusty bread and makes a perfect cozy fall meal.
