Smash Burgers

This recipe features ground beef patties that are quickly seared on a hot skillet to create crispy edges and juicy centers. The burgers are pressed flat during cooking, resulting in a golden-brown crust and tender interior, finished with melted cheese and served on buns.

Ingredients
  

  • 1 lb ground beef 80/20 blend preferred
  • 4 slices cheddar cheese optional
  • 4 each buns burger buns
  • to taste salt and pepper for seasoning

Equipment

  • Skillet or cast iron pan
  • Spatula
  • measuring cups and spoons
  • Bowl for mixing

Method
 

  1. Preheat the skillet over high heat until very hot, until a drop of water sizzles immediately upon contact.
  2. Divide the ground beef into four equal portions and gently form each into a loose ball. Place each ball on the hot skillet and use a spatula to smash them down into thin, flat patties about ΒΌ inch thick, pressing edges for even shape.

  3. Season each patty generously with salt and pepper. Cook for about 2-3 minutes until the edges turn golden brown and the underside develops a crispy crust.

  4. Use a spatula to flip each patty and immediately place a slice of cheese on top. Cook for an additional 1-2 minutes until cheese melts and the patty is cooked through.

  5. Remove the patties from the skillet once the cheese is melted and they are cooked to your desired doneness, approximately 3-4 minutes total. Toast the buns lightly in the skillet if preferred.

  6. Assemble the burgers by placing each patty on a bun bottom, then topping with additional condiments or toppings as desired. Complete with the top bun and serve immediately.
