Ingredients
  

  • 4 cups chicken or vegetable broth preferably low sodium
  • 4 cups fresh broccoli florets about 1 large head
  • 1 small yellow onion peeled and chopped
  • 3 cloves garlic minced
  • 1 cup shredded cheddar cheese or your favorite melting cheese
  • 1 cup milk or heavy cream for extra creaminess
  • 2 tablespoons butter optional, for flavor

Method
 

  1. Add the broth, chopped onion, minced garlic, and broccoli florets into your slow cooker.
  2. Cover and set the slow cooker on low for about 4 hours, until the broccoli is tender and the flavors meld. The house will smell amazing!
  3. Use an immersion blender directly in the slow cooker to blend the soup until smooth and creamy. Alternatively, carefully transfer in batches to a blender and purée until silky.
  4. Stir in the butter and milk or heavy cream, and season with salt and pepper to taste. Warm just until the butter melts and the mixture is heated through.
  5. Return the soup to low heat if needed, then sprinkle the shredded cheese over the top. Stir gently until the cheese is fully melted and incorporated, creating a luscious, cheesy texture.
  6. Give the soup a final taste and adjust seasoning with additional salt or pepper if desired. Serve the soup hot, garnished with extra cheese or a sprinkle of fresh herbs if you like.

Notes

For a thicker soup, simmer uncovered for an extra 10-15 minutes after blending. Feel free to add a splash of hot sauce or a pinch of nutmeg for extra flavor dimension.
