- Add the broth, chopped onion, minced garlic, and broccoli florets into your slow cooker.
- Cover and set the slow cooker on low for about 4 hours, until the broccoli is tender and the flavors meld. The house will smell amazing!
- Use an immersion blender directly in the slow cooker to blend the soup until smooth and creamy. Alternatively, carefully transfer in batches to a blender and purée until silky.
- Stir in the butter and milk or heavy cream, and season with salt and pepper to taste. Warm just until the butter melts and the mixture is heated through.
- Return the soup to low heat if needed, then sprinkle the shredded cheese over the top. Stir gently until the cheese is fully melted and incorporated, creating a luscious, cheesy texture.
- Give the soup a final taste and adjust seasoning with additional salt or pepper if desired. Serve the soup hot, garnished with extra cheese or a sprinkle of fresh herbs if you like.
Notes
For a thicker soup, simmer uncovered for an extra 10-15 minutes after blending. Feel free to add a splash of hot sauce or a pinch of nutmeg for extra flavor dimension.
