Method

  5. Spread a small spoonful of caramelized onions and a sprinkle of chopped thyme onto the center of each piece, then top with a generous amount of smoked cheese and crumbled chorizo.
  6. Beat the egg in a small bowl and brush the edges of each pastry with the egg wash, giving them a shiny, golden finish once baked.
  7. Bake in the preheated oven for 15-20 minutes, until the pastries are puffed, golden, and crispy.
