  • 1 bunch bunch radishes preferably small to medium size
  • 1/4 cup Parmesan cheese freshly grated
  • 2 tablespoons olive oil good quality extra virgin recommended
  • to taste salt preferably flaky sea salt
  • to taste black pepper freshly cracked
  • 1 clove garlic optional, minced
  • 1 lemon lemon for zest or juice
  • 1-2 tablespoons fresh herbs chopped parsley or thyme, optional

Method
 

  1. Preheat your oven to 200°C (390°F) and line a baking sheet with parchment paper or a silicone mat for easy cleanup.
  2. Rinse the radishes well, then trim off the green tops. If they’re larger, cut them in halves or quarters to ensure even roasting and tender centers.
  3. In a mixing bowl, toss the radishes with olive oil, salt, pepper, and minced garlic if using. Make sure each piece is well coated; you should see a light sheen on the surface.

  4. Spread the radishes out in a single layer on the prepared baking sheet, giving them some space to roast evenly without crowding.
  5. Roast in the oven for about 20-25 minutes, shaking the pan or flipping the radishes halfway through. You’ll notice the edges turning golden brown and the radishes becoming tender when pierced with a fork.
  6. While the radishes roast, grate the Parmesan cheese and prepare a small bowl for it. Also, zest or squeeze the lemon for brightness.

  7. Once the radishes are tender and golden, sprinkle the grated Parmesan evenly over them. Return to the oven for an additional 5 minutes until the cheese melts and forms a crispy crust.
