  • 1 bunch bunch radishes firm and fresh
  • 3 cloves garlic thinly sliced
  • 2 tablespoons olive oil good quality
  • 1 tablespoon fresh herbs chopped parsley or thyme

  • 1 lemon lemon for squeezing over after roasting

Method
 

  1. Preheat your oven to 220°C (430°F). Line a baking sheet with parchment paper for easy cleanup.
  2. Wash the radishes thoroughly and trim off the greens. If some are large, cut them in half for even roasting.
  3. Place the radishes in a mixing bowl and toss with the olive oil, sliced garlic, chopped herbs, salt, and pepper until evenly coated. The mixture should feel glossy and fragrant.
  4. Spread the radishes out in a single layer on the prepared baking sheet, ensuring they aren’t crowded to promote even caramelization.
  5. Roast in the oven for 20 to 25 minutes, flipping once halfway through. You want the radishes to develop golden edges and a slight caramelization, with the garlic beginning to crisp.
  6. Remove from the oven and let sit for a couple of minutes. Squeeze fresh lemon juice over the radishes for a bright, zesty finish that balances their sweetness.
