Ingredients
  

  • 1 small butternut pumpkin or pie pumpkin peeled, seeded, sliced into ½-inch pieces
  • 1 tablespoon olive oil for roasting
  • 1 pre-made flatbread store-bought or homemade, baked until slightly crisp
  • ½ cup feta cheese crumbled
  • ½ cup pumpkin seeds optional, for garnish and crunch
  • 1 teaspoon fresh thyme chopped, optional
  • to taste salt and pepper

Method
 

  1. Preheat the oven to 400°F (200°C). Spread pumpkin slices on a baking sheet, drizzle with olive oil, and toss to coat evenly. Roast for 15-20 minutes until pumpkin is tender and edges are lightly golden.
  2. Allow roasted pumpkin to cool slightly. Transfer pumpkin to a food processor or bowl and mash until smooth; set aside.
  3. While the pumpkin cools, place flatbread on a baking sheet. Brush lightly with olive oil and bake in the oven for 5-7 minutes until slightly crispy and warmed through.
  4. Remove flatbread from oven. Spread the mashed roasted pumpkin evenly over the surface, leaving a small border around the edges.
  5. Sprinkle crumbled feta cheese evenly over the pumpkin layer. Add chopped thyme and a pinch of salt and pepper to taste.
  6. Bake the flatbread with toppings for an additional 8-10 minutes until the feta is soft and slightly golden, and the edges are crispy.
  7. Remove from the oven. Optionally, sprinkle pumpkin seeds on top for crunch and visual appeal before serving hot.

Notes

For extra flavor, drizzle with honey or add fresh herbs before serving. Can be made vegetarian or topped with sautéed vegetables for variation.
