- Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper or a silicone mat.
- Peel the garlic cloves and leave them whole or crush them slightly if you want a punchier flavor. Set aside.
- Trim the broccoli into small, evenly sized florets, about 2-3 inches wide, to ensure uniform roasting.
- In a mixing bowl, toss the broccoli florets and garlic cloves with olive oil, making sure everything is well coated. Season generously with salt.
- Spread the coated broccoli and garlic in a single layer on the prepared baking sheet, giving enough space for even roasting.
- Pop the sheet into the oven and roast for 20 to 25 minutes, shaking or turning halfway through. The garlic should turn golden and fragrant, and the broccoli should develop some charred bits.
- Remove from the oven once the broccoli is tender and slightly crispy around the edges, and the garlic is caramelized and soft.
- Squeeze fresh lemon over the roasted broccoli and garlic for a bright contrast, then serve immediately to enjoy the smoky, sweet aroma and tender texture.
Notes
For extra flavor, sprinkle with Parmesan or nutritional yeast after roasting. Adjust seasoning with more salt or a dash of chili flakes for heat. To keep it vegan, skip the cheese and add herbs like thyme or rosemary before roasting.
