Method
 

  1. Preheat your oven to 180°C (350°F) and generously spray the mini muffin tin with cooking spray or lightly butter each cup to prevent sticking.
  2. In a large mixing bowl, whisk together the eggs and heavy cream until the mixture is smooth and slightly frothy, about 1-2 minutes.
  3. Stir in the shredded cheese, chopped herbs, nutmeg, salt, and pepper, mixing just until evenly combined.
  4. Gently fold in the cooked, crumbled bacon if using, distributing it evenly throughout the mixture.
  5. Spoon the filling mixture into each muffin cup, filling about three-quarters full to allow room for expansion.
  6. Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown and the centers are just set with a slight jiggle.
  7. Remove the mini quiche bites from the oven and let them cool in the tin for about 5 minutes—the filling will firm up slightly as it cools.
  8. Use a small spoon or knife to gently loosen each bite from the muffin tin, then transfer to a wire rack or plate.
  9. Serve the mini quiche bites warm or at room temperature, garnished with extra herbs if desired, and enjoy their tender, cheesy goodness.
