Ingredients

  • 1/2 cup fresh lemon juice strained to remove seeds
  • 2 tablespoons simple syrup or honey adjust to taste
  • 2 cups ice cubes preferably crushed

Equipment

  • Blender
  • Measuring Cups
  • Citrus juicer

Method

  1. Pour fresh lemon juice into the blender.
  2. Add the sweetener, such as simple syrup or honey, to the blender with the lemon juice.
  3. Pour in the ice cubes into the blender, filling it to the top.
  4. Secure the lid on the blender and blend on high speed until the mixture is slushy and smooth, about 30-45 seconds. You should see the ice breaking down and the liquid becoming frosty.
  5. Stop the blender and check the texture; it should be thick, icy, and scoopable. If it's too runny, add a few more ice cubes and blend again briefly.
  6. Pour the slushie into chilled glasses, garnishing with a lemon wedge if desired.

Notes

Adjust the sweetness and tartness by varying the amount of lemon juice and sweetener. Serve immediately for the best icy texture.
