Ingredients

  • 4 thick slices watermelon preferably seedless
  • 2 oz tequila prefer blanco or silver
  • 1 tbsp honey optional, for added sweetness
  • 1 lime lime juice freshly squeezed
  • ice as needed ice cubes

Equipment

  • Grill or Grill Pan
  • Blender
  • Cutting board
  • Sharp knife
  • measuring cups and spoons
  • Serving glasses

Method

  1. Use a sharp knife and cutting board to cut the watermelon into four evenly thick slices, removing any rind.
  2. Preheat the grill or grill pan to medium-high heat. Lightly brush the watermelon slices with a little oil if desired.
  3. Place the watermelon slices onto the grill. Cook for about 2-3 minutes per side, until grill marks appear and the edges begin to caramelize and develop a fragrant smoky aroma.
  4. Transfer the grilled watermelon slices to a cutting board and let cool slightly. Chop them into smaller chunks suitable for blending.
  5. In a blender, combine the grilled watermelon chunks, tequila, honey (if using), lime juice, and a handful of ice cubes. Blend until smooth and frothy, about 30-45 seconds.
  6. Pour the mixture into chilled glasses, garnish with a small wedge of grilled watermelon or lime if desired, and serve immediately.

Notes

For a more intense smoky flavor, briefly char the watermelon slices over an open flame before grilling. Adjust sweetness with honey to taste. Best served cold immediately after blending.
