- Use a sharp knife and cutting board to cut the watermelon into four evenly thick slices, removing any rind.
- Preheat the grill or grill pan to medium-high heat. Lightly brush the watermelon slices with a little oil if desired.
- Place the watermelon slices onto the grill. Cook for about 2-3 minutes per side, until grill marks appear and the edges begin to caramelize and develop a fragrant smoky aroma.
- Transfer the grilled watermelon slices to a cutting board and let cool slightly. Chop them into smaller chunks suitable for blending.
- In a blender, combine the grilled watermelon chunks, tequila, honey (if using), lime juice, and a handful of ice cubes. Blend until smooth and frothy, about 30-45 seconds.
- Pour the mixture into chilled glasses, garnish with a small wedge of grilled watermelon or lime if desired, and serve immediately.
Notes
For a more intense smoky flavor, briefly char the watermelon slices over an open flame before grilling. Adjust sweetness with honey to taste. Best served cold immediately after blending.
