Ingredients

  • 1 1/2 cups gluten-free all-purpose flour or gluten-free flour blend
  • 1 cup pumpkin puree preferably unsweetened
  • 2 large eggs
  • 1/4 cup maple syrup or honey
  • 1/4 cup vegetable oil
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup milk dairy or plant-based

Equipment

  • Waffle iron
  • Mixing bowls

Method

  1. In a large mixing bowl, whisk together the gluten-free flour, baking powder, cinnamon, nutmeg, and salt until evenly combined.
  2. In a separate bowl, beat the eggs briefly, then add pumpkin puree, maple syrup, vegetable oil, and milk. Whisk until the mixture is smooth and well combined.
  3. Pour the wet mixture into the dry ingredients, folding gently with a spatula until just combined; avoid overmixing to keep the batter light.
  4. Preheat your waffle iron and lightly spray it with non-stick spray or brush with oil to prevent sticking.
  5. Pour about 1/3 to 1/2 cup of batter onto the center of the preheated waffle iron. Close the lid gently.
  6. Cook the waffle until it’s golden brown and crispy around the edges, typically 3-5 minutes depending on your waffle iron.
  7. Carefully lift the waffle from the iron and transfer it to a serving plate. Repeat with the remaining batter, re-greasing if necessary.
  8. Serve the waffles warm with your favorite toppings such as syrup, whipped cream, or nuts to enhance their cozy fall flavors.

Notes

Ensure the waffle iron is properly greased to prevent sticking. Adjust cooking time for your specific iron to achieve crispy, golden results. For extra flavor, consider adding nuts or dried cranberries into the batter.
