  • 1/4 cup granulated sugar for the cream cheese layer
  • 1 tsp vanilla extract for the cream cheese layer
  • 2 cups mixed fresh fruit sliced strawberries, kiwi, mango, blueberries, etc.
  • 1/4 cup apricot jam melted, for glazing
  • 1 tsp lemon juice for the fruit topping

Method
 

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine flour and sugar for the crust. Add melted butter and stir until the mixture resembles coarse crumbs. Press this dough evenly into a parchment-lined baking sheet to form a flat crust.
  2. Bake the crust in the oven for about 15 minutes, or until golden around the edges. Remove from oven and let it cool completely on a wire rack. This helps the crust set and become crisp.
  3. In a bowl, beat the softened cream cheese with sugar and vanilla until smooth and creamy. Use a spatula to spread this tangy layer evenly over the cooled crust, creating a soft, thick base for the fruit.
  4. Prepare the fresh fruit by slicing strawberries, kiwi, mango, and other preferred fruits into thin, even slices. Arrange the fruit slices artfully on top of the cream cheese layer, covering the entire surface with a colorful mosaic.
  5. Warm the apricot jam until it becomes pourable, then brush it gently over the arranged fruit to give a glossy shine and a subtle sweetness. Squeeze a teaspoon of lemon juice over the fruit to brighten the flavors.
