  • 1 red bell pepper bell pepper deseeded and diced
  • 2 medium tomatoes seeded and diced
  • 1/2 cup red onion finely chopped
  • 1/4 cup cilantro chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon cumin ground
  • salt to taste salt

Method
 

  1. Gather all ingredients and rinse the black beans under cold water, then drain thoroughly. Dice the red bell pepper and tomatoes, finely chop the red onion and cilantro, and measure out the corn and other seasonings.
