Ingredients
  

  • 1 pack puff pastry sheets thawed but kept cold
  • 4 medium fresh figs ripe and yield slightly under gentle pressure
  • 4 oz Brie cheese mild and creamy, cut into small cubes
  • 1 tbsp honey optional, for drizzling
  • 1 egg egg for egg wash
  • 1 tbsp water for egg wash
  • Fresh thyme optional, for garnish
  • Black to taste pepper freshly ground, optional

Method
 

  1. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. Slice the fresh figs into thin rounds about ¼ inch thick. Set aside.
  3. Cut the Brie cheese into small cubes, roughly the size of a dime; this helps it melt evenly.
  4. Unroll the puff pastry sheets and cut them into 2-inch squares using a ruler or measure for uniformity.
  5. Place the pastry squares on the prepared baking sheet, spacing them slightly apart.
  6. Top each pastry square with a small cube of Brie and a slice of fig, arranging them neatly in the center.
  7. Gently fold the edges of the pastry slightly over the filling, pinching to contain it without sealing completely.
  8. Whisk the egg with water to create an egg wash, then lightly brush the tops of each pastry with it for a shiny, golden finish.
  9. Bake in the preheated oven for 12-15 minutes, until the pastry is puffed, golden, and crisp.
  10. Once baked, remove from the oven and transfer to a cooling rack. Let sit for 5 minutes to cool slightly and allow the cheese to set.
  11. If desired, drizzle with honey and sprinkle with fresh thyme or a pinch of black pepper for extra flavor and presentation.
  12. Serve warm or at room temperature, enjoying the crispy pastry with melty Brie and sweet figs in every bite.

Notes

For a more robust flavor, sprinkle a little fresh thyme or black pepper before baking. These bites are best enjoyed warm, but can be made ahead and warmed slightly before serving.
