Ingredients

  • 1 cup all-purpose flour
  • ¼ cup sugar
  • 1 teaspoon baking powder

  • 1 large egg
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • 2 apples peeled & diced
  • 1 tablespoon butter
  • 1 tablespoon brown sugar
  • For the Glaze
  • ½ cup powdered sugar
  • 1 –2 tablespoons milk
  • ¼ teaspoon vanilla

Method
 

  1. Prep the Oven
  2. Preheat the oven to 375°F and line a baking sheet with parchment.
  3. Cook the Apples
  4. Sauté the diced apples with butter and brown sugar until soft and caramelized.
  5. Mix the Dry Ingredients
  6. In a bowl, whisk flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  7. Mix the Wet Ingredients
  8. In another bowl, whisk the egg, milk, and vanilla until smooth.
  9. Combine Everything
  10. Pour the wet mixture into the dry and stir gently until just combined.
  11. Add the Apples
  12. Fold the warm apples into the batter so every scoop has fruit.
  13. Scoop Onto the Tray
  14. Drop small mounds of batter onto the baking sheet, leaving space between them.
  15. Bake Until Golden
  16. Bake for 12–15 minutes until the tops look golden and lightly crisp.
  17. Mix the Glaze and Drizzle Over the Fritters
  18. Whisk together the powdered sugar, milk, and vanilla until smooth, then pour the glaze over the warm fritters so it melts gently into their soft cracks.

Notes

I like serving these warm with extra glaze or a dusting of cinnamon sugar. A scoop of vanilla ice cream beside them makes the whole plate feel extra cozy.
