In a medium saucepan, combine the corn flour with 1 cup of milk over medium heat. Stir constantly to create a smooth mixture.
Gradually add the remaining milk, brown sugar, vanilla extract, salt, and cinnamon stick. Stir continually until the mixture thickens. This will take around 15 minutes.
Remove the cinnamon stick and serve the atole hot, alongside tamales if desired.
