Combine flour and salt in a large bowl.
Add chilled, cubed butter to the flour and cut it with a pastry cutter until the mixture resembles coarse crumbs.
Gradually mix in ice water, stirring with a fork until dough begins to form.
Shape the dough into two disks, wrap each in plastic wrap, and chill for at least 30 minutes.
Combine apple slices, sugar, flour, cinnamon, nutmeg, and lemon juice in a large mixing bowl.
Roll out one disk of dough on a floured surface and fit into a 9-inch pie plate.
Pour the apple filling into the crust-lined pie plate.
Roll out the second disk and place it over the filling. Trim and crimp the edges.
Cut slits in the top crust for steam to escape. Bake in preheated oven until crust is golden brown.
Let the pie cool on a wire rack before serving.
