Heat oil in a kadai (wok) over high heat. Add chopped onions and sauté until golden brown.Ensure not to burn the onions. -

Add ginger-garlic paste, sauté for a minute or until the raw smell is gone.Stir continuously to avoid sticking. -

Introduce chicken pieces into the kadai, cook until they turn white and are half cooked.Maintain high heat for sear. -

Add all the spices: coriander powder, cumin powder, red chili powder, and salt. Mix well.Coat the chicken evenly. -

Pour in tomato puree, cook until oil separates from the masala.Stir occasionally. -

Add bell pepper slices and cook for an additional 5 minutes until bell peppers are soft.Ensure peppers retain some crunchiness. -
Step 7
Finish with the addition of garam masala and fresh cream if using. Garnish with coriander leaves before serving.Serve hot for best taste.
