Place chicken pieces in a large bowl. Add buttermilk, salt, and black pepper. Mix well to coat all pieces. Cover and refrigerate for at least 30 minutes or overnight for best results.
In a separate bowl, combine all-purpose flour with paprika, garlic powder, onion powder, cayenne pepper, oregano, thyme, and salt. Mix well.
Remove chicken from marinade one piece at a time. Dredge in the flour and spice mixture, ensuring full coverage. Shake off excess.
Heat oil in a large fryer or deep pot to 350°F. Carefully add chicken pieces and fry until golden brown and cooked through, approximately 15-20 minutes.
Remove chicken from oil and drain on paper towels. Allow to rest for 5-10 minutes. Serve hot.
