In a large bowl, combine flour and salt. Dice the butter and cut it into the flour mixture until it resembles coarse crumbs. Stir in 1/4 cup of ice water, adding more if necessary, until the dough forms a ball. Wrap and chill in the refrigerator.
In a large bowl, combine sliced apples, sugar, flour, cinnamon, nutmeg, and salt. Mix until apples are well coated.
Preheat oven to 375°F (190°C). Divide the dough in half. Roll out each half on a lightly floured surface to fit a 9-inch pie pan. Place one rolled dough into the pie pan.
Spoon the apple filling into the crust in the pie pan. Dot with small pieces of butter.
Place the second rolled-out dough over the filling. Seal the edges, trim excess dough, and cut slits for ventilation.
Bake for 50-60 minutes until the crust is golden brown and the filling is bubbly. Allow the pie to cool before serving.
